Our Wines
We specialise in production ofthe pét-nat type of effervescent wine. We immensely enjoy the impossibility to predict the result before bottling and are surprised again and again by the amazing outcome in the bottle. The wines primarily strongly express their grape origin through both taste and aroma.
We use absolutely no wine additives, we do not add yeast, and we do not even use sulphur. The wines are naturally conserved in the bottles by the dissolved CO2. Another preservative agent is represented by the sediment present in the bottle – yeast autolysis.
Within the range of white wines, we mainly work with Rhine Riesling, but also with Welsch Riesling, Sylvaner and Pinot Blanc, while the red wine range is represented by BlauFränkisch (Frankovka) and Cabernet Moravia.

Pet-nat means pétillant naturel, that is naturally sparkling.
Pét-nat is a type of wine produced by an untraditional method. This wine is bottled before its fermentation is complete. Thanks to that, fermentation continues in the bottle, producing bubbles. Pét-nat production begins like when you produce standard wine. The must is placed in an earthenware container and left to ferment until the required alcohol strength is reached. At that moment, the wine is bottled and the bottle is sealed with a crown cork.
The bottles are placed in wooden boxes. Fermentation continues in the bottles thanks to the leftover sugar present. Yeasts consume that residual sugar, transforming it to carbon dioxide, which dissolves in the wine, forming bubbles. This in-bottle fermentation continues until all sugar is consumed. That means that a pét-nat contains no residual sugar.
The finished wine is neither filtered not stabilised. It is sold directly “as is”. The production involves no interventions and no admixtures. Thus you buy directly and exclusively 100% grape juice which will reward you by its wonderfully fresh grape sapor.
